MEET OUR CHEF
Born in Korea in 1957, Chef Woo Kim discovered his passion for cooking in his early twenties, and he hasn’t stopped cooking since! He began his career working in restaurants serving a variety of cuisines, giving him valuable exposure to different cultures and culinary styles. While running his own restaurant with his wife in Seoul, Chef Kim dreamt of bringing Korean cuisine to the rest of the world. This dream eventually prompted his move to the United States in 2000, where he was able to share Korean food through his catering business to diners in New York, New Jersey, Pennsylvania, Ohio and beyond.
Dons Bogam owner K. R. Choi brought Chef Kim on as head chef in 2006, and he has been bringing traditional Korean cuisine to American palettes ever since! He loves to introduce American diners to traditional Korean flavors and dishes they may not previously have tasted, and takes pride in his ability to cater his native cuisine to appeal to each individual diner who he has the pleasure to feed.

평일 낮에는 런치스페셜로 꾸며진 좋은 가격의 런치메뉴만 먹는걸 추천합니당. 갈비와 냉면, 갈비와 찌개 등등 조합으로 셋트가 있는데 매우 괜찮아요.
보통 Western 도시에 있는 한식당이라고 하면 번화가에서는 조금 떨어진 곳에 위치한, 쾌적하지 않은 환경의 식당이거나, 서울 현지 음식 맛과 비교했을 때 같은 음식인 게 맞나 싶을 정도로 맛의 괴리감이 크고, 터무니없이 비싼 가격 등의 이유로 해당 도시에서 발걸음 한 한식당에 대해 배신감과 실망감을 느껴본 적이 있어요.
그래도 몇 년 전부터 서양 문화권 사람들의 입맛에 친숙하게 다가갈 수 있는 불고기나 잡채, 김밥 등으로 시작해 메뉴들을 좀 더 융통성 있게 활용하고, 꼭 전통적인 레시피를 고수한 맛이 아닌 ‘그들’이 받아들이기 쉬운 방법으로 맛을 내게끔 refine 된 한국 음식들이 여러 도시에서 소개되면서, 더이상 어둡고 칙칙한 식당에서 데면데면한 종업원이 서빙하는, 한국인으로서 조차 처음 맡는 냄새와 처음 겪는 매운맛을 코리안 푸드라고 소개하지 않아도 될, 여러 better options 들이 생겨나게끔 해외에서 한식 요리를 하시는 분들 굉장히 훌륭한 일들을 해주셔서 정말 존경하고 감사하는 마음입니다. 쓰기 시작하면서 이렇게 감사하다고 표현까지 할 줄 몰랐는데 생각할수록 넘 훌륭하신듯. ㅎ_ㅎ
어쨌든 돈의보감 또한, 그런식으로 접한 한식을 시작으로 매력을 느껴 점점 진짜의 맛을 내는 한국음식에 대해 알고싶어 하는 다른 문화권 사람들에게 소개하기 좋은 뉴욕의 한식당중 한 곳 인것 같아요.
2017년 4월인 현재는 renovation으로 영업을 안하고 5월 1일에 다시 오픈을 한다고 합니다. 생긴이래 첫 새단장 인것 같은데 재오픈 하면 꼭 가봐야겠어요.
